Tablespoons and teaspoons are volume units that are useful
for measuring smaller amounts of ingredients (such as spices, oils, and vanilla
extract) that are too small to weigh on a scale and are too small to measure in
cups. They are used in both the metric and imperial systems and are essential
in cooking and baking.
Memorizing this kitchen fact will save you time when working
with a limited set of measuring spoons or scaling your favourite recipes up or
down:

Teaspoons and tablespoons are both used in the United States
and around the world, but they aren't the same thing. The imperial system is
used by the United States, Liberia, and Myanmar, while the metric system is
used by the rest of the world.
1. A tablespoon equals 1/2 fluid ounces in the imperial
system (14.79 millilitres)
2. A metric tablespoon equals exactly 15 mL in the metric
system.
3. Although Australia uses
the metric system, their tablespoon is slightly different: 20 mL equals one
tablespoon in Australia (0.68 US fluid ounces)
4. A US teaspoon equals 1/6 fluid ounces (4.93 mL),
which is slightly less than a 5-mL metric teaspoon.
These volume differences are minor enough that American and
metric measuring spoons can be interchanged without significantly changing a
recipe.
In the United Kingdom, Australia, Canada, and New Zealand, a
dessert spoon is a volume unit.
It's about the size of a tablespoon or a teaspoon at 10 mL.
A stick of butter in the United States is typically 4 ounces
(113.40 grams), or 8 tablespoons. So half a stick of butter equals four
tablespoons.
Because tablespoons are a measure of volume rather than
mass, the weight of a spoonful of sugar varies depending on the type of sugar
used. However, 1 tablespoon of granulated sugar weighs approximately 12.5 grams.
